Christmas Dinner Desserts

10-inch Minced Meat Pie. The crust is gluten free. I used my Christmas cookie cutters to make the top crust. I brush milk on the crust and sprinkle sugar to get it to brown nicely. 

Cherry Cobbler. I used 2 cups of cherries and my daughter suggested twice as many next time. It was delicious anyway!

Pumpkin Tiramisu

This is my first Tiramisu I have ever made. My son likes all kinds of Tiramisu, so I decided to make it for his 37th Thanksgiving time birthday. We celebrated on Thanksgiving Day. It turned out beautifully and tasted wonderful. He really liked it!

Ben's Pumpkin Cake

This is a cake that I quickly made and decorated for my grandson, when my first plan did not work. Ben likes pumpkins and his face lit up when he saw all the pumpkins on here and the corn candy! Love to please my Ben!

A Happy 84th Birthday!

This is an 8-inch round, 2-layer "Butter" cake. It has Strawberry filling between the layers and is frosted with Buttercream icing. I made this for my uncle's 84th birthday. I didn't have my equipment because I made it at his house. I bought only a few supplies. Turned out tasty with a simple flower design. The celebration was July 31.

July 4 Cake Balls - A bit diffferent this time!

This is the third year I have made a cake ball flag for the 4th of July. This year we are celebrating with family instead of the neighbborhood. Just as I was about to dip 12 cakes balls in blue candy melts, I realized I should read the package very carefully. Sure enough, they were packaged in a facility where peanuts and treenuts are also packaged. So, I had to think what to do. I made this because I was sure my grandson would love it but he has an allergy to peanuts. Can't risk a peanut reaction! I took the 12 balls that would have been blue and pressed them out to make stars. I had the perfect cookie cutter. There were 24 stars. I put Graham Crackers on the tray and frosted with blue Cream cheese icing. Then I placed the first layer of stars. I put blue frosting on those and then put the 2nd star on top. I used a star tube to pipe the white frosting on the stars. 
I think it was a pretty good replacement and my grandson can have the "stars" today for his dessert!

Pentecost - The Coming of the Holy Spirit Descending like a Dove and with Flames like Fire!

 This 12"x18" sheet cake is yellow, orange and red cake mixes swirled together. It served 54.
Additionally, I made 48 cupcakes to serve at the after worship fellowship. These cupcakes are yellow Gluten Free with "flames" of fire on the tops.

Bunny Carrot Patch Cake

This is an 11x7" Gluten Free Yellow Cake covered with Dark Chocolate Frosting. The "dirt" in the garden is made from Gluten Free chocolate sandwich cookies crumbs. The "carrots" just sticking up out of the ground are made from the cream in the cookies. The green tops are from Buttercream icing. And of course "Peeps" are made to stand in the garden with toothpick support. 
My grandson sure did enjoy the cake -- both the way it looks and the taste -- and so did all of the adults.

Three Kings and the Star


The Three Kings and the Star cakes. The star and the king farthest right are Lemon Cake -- each is half of a 10" round cake. The first two kings are Red Velvet cake -- each is half of a 12" round cake. These cakes were made for our Epiphany Open House on Sunday, January 6, 2019.

I made cakes similar to these back in the 70s. At that time, my mother was with me and she helped me with ideas and suggestions. It was such fun to create with her. As I made these, I couldn't help but think about her and remember. I'm still doing cakes, but I miss you Mom!

King's Cake for Epiphany!


The cake is a gluten free Pastry cake with Cream Cheese and Walnut filling. Decorated in four "Royal" colors and candy "beads." I made it for our Epiphany Open House on Sunday, January 6, 2019.
